'Otai 'ava (Kava Stir-fry)

Ingredients
- 1 lb chicken breast, sliced
- 2 cups kava, peeled and grated
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 carrots, julienned
- 2 cups broccoli florets
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Heat the remaining vegetable oil in the same skillet. Add the grated kava, onion, bell pepper, carrots, broccoli, ginger, and garlic. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet. Add soy sauce, salt, and pepper. Stir-fry for an additional 2-3 minutes to combine all the flavors.
- Remove from heat and serve the kava stir-fry hot.
