Otak-otak Sensation
Otak-Otak Sensation is a popular dish in Singaporean cuisine, featuring a flavorful mixture of fish paste, spices, and coconut milk, wrapped in banana leaves and grilled to perfection.
Ingredients
- 500g white fish fillets, such as snapper or cod
- 1 cup coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp sugar
- 1 egg
- 1/2 cup finely chopped kaffir lime leaves
- Banana leaves, for wrapping
Instructions
- In a food processor, blend the fish fillets, coconut milk, red curry paste, fish sauce, and sugar until smooth.
- Transfer the mixture to a bowl and stir in the egg and kaffir lime leaves.
- Cut the banana leaves into 8-inch squares and briefly pass them over an open flame to soften.
- Place a portion of the fish mixture onto each banana leaf square and fold to form a packet.
- Grill the packets over medium heat for 10-15 minutes, or until the fish is cooked through.
