Otak-otak Surprise
Otak-Otak Surprise is a popular dish in Bruneian cuisine, known for its flavorful and aromatic combination of spices and seafood. This dish is perfect for a special occasion or a family gathering.
Ingredients
- 500g white fish fillets, such as snapper or cod
- 1 cup coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon tamarind paste
- 1 teaspoon sugar
- 1 teaspoon salt
- 4 kaffir lime leaves, thinly sliced
- 4 banana leaves, for wrapping
Instructions
- In a food processor, blend the fish fillets, coconut milk, red curry paste, tamarind paste, sugar, and salt until smooth.
- Transfer the mixture to a bowl and stir in the sliced kaffir lime leaves.
- Cut the banana leaves into 8 rectangles, then briefly pass them over an open flame to soften.
- Place a spoonful of the fish mixture onto each banana leaf rectangle and fold to form a packet.
- Secure the packets with toothpicks and steam for 15-20 minutes.
- Once cooked, serve the Otak-Otak hot with steamed rice.
