Ingredients

  • 500g white fish fillets, such as snapper or cod
  • 1 cup coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon tamarind paste
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 4 kaffir lime leaves, thinly sliced
  • 4 banana leaves, for wrapping

Instructions

  1. In a food processor, blend the fish fillets, coconut milk, red curry paste, tamarind paste, sugar, and salt until smooth.
  2. Transfer the mixture to a bowl and stir in the sliced kaffir lime leaves.
  3. Cut the banana leaves into 8 rectangles, then briefly pass them over an open flame to soften.
  4. Place a spoonful of the fish mixture onto each banana leaf rectangle and fold to form a packet.
  5. Secure the packets with toothpicks and steam for 15-20 minutes.
  6. Once cooked, serve the Otak-Otak hot with steamed rice.
