Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, chopped
- 3 tomatoes, diced
- 2 bell peppers, sliced
- 4 cloves of garlic, minced
- 1/4 cup olive oil
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups water
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic, and sauté until they are soft and translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the tomato paste, paprika, cumin, salt, and pepper.
- Add the tomatoes, bell peppers, and water to the pot.
- Bring the stew to a boil, then reduce the heat and let it simmer for 2 hours, stirring occasionally.
- Once the lamb is tender and the stew has thickened, remove from heat and let it rest for a few minutes before serving.
