Ottoman Lamb Stew (Osmanlı Kuzu Güveç)

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 2 bell peppers, sliced
  • 4 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups water

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic, and sauté until they are soft and translucent.
  3. Add the lamb cubes to the pot and brown them on all sides.
  4. Stir in the tomato paste, paprika, cumin, salt, and pepper.
  5. Add the tomatoes, bell peppers, and water to the pot.
  6. Bring the stew to a boil, then reduce the heat and let it simmer for 2 hours, stirring occasionally.
  7. Once the lamb is tender and the stew has thickened, remove from heat and let it rest for a few minutes before serving.
