Outback Nachos

Ingredients

  • 1 lb kangaroo mince
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 cup diced tomatoes
  • 1 cup kidney beans, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 bag of corn chips
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large skillet, cook the kangaroo mince over medium heat until browned.
  2. Add the diced onion and red bell pepper, and cook until softened.
  3. Stir in the diced tomatoes, kidney beans, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
  4. Arrange the corn chips on a serving platter and sprinkle with the cooked kangaroo mixture and shredded cheese.
  5. Place the platter under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  6. Top with dollops of sour cream and chopped cilantro before serving.
