Outback Nachos

Ingredients
- 1 lb kangaroo mince
- 1 onion, diced
- 1 red bell pepper, diced
- 1 cup diced tomatoes
- 1 cup kidney beans, drained and rinsed
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 bag of corn chips
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the kangaroo mince over medium heat until browned.
- Add the diced onion and red bell pepper, and cook until softened.
- Stir in the diced tomatoes, kidney beans, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
- Arrange the corn chips on a serving platter and sprinkle with the cooked kangaroo mixture and shredded cheese.
- Place the platter under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
- Top with dollops of sour cream and chopped cilantro before serving.
