Outback Potato Soup

Ingredients

  • 6 slices bacon, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 large potatoes, peeled and diced
  • 1/4 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 3 cups milk
  • 3/4 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and minced garlic to the pot with the bacon drippings and cook until the onion is translucent.
  3. Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  4. In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes, stirring constantly.
  5. Gradually whisk in the milk and continue cooking until the mixture thickens.
  6. Pour the milk mixture into the pot with the potatoes and broth. Stir well and bring the soup to a simmer.
  7. Stir in the shredded cheddar cheese until melted and well combined.
  8. Season with salt and pepper to taste.
  9. Serve the soup hot, topped with the crispy bacon.
