Outback Potato Soup

Ingredients
- 6 slices bacon, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 large potatoes, peeled and diced
- 1/4 cup unsalted butter
- 1/3 cup all-purpose flour
- 3 cups milk
- 3/4 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the drippings in the pot.
- Add the chopped onion and minced garlic to the pot with the bacon drippings and cook until the onion is translucent.
- Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes, stirring constantly.
- Gradually whisk in the milk and continue cooking until the mixture thickens.
- Pour the milk mixture into the pot with the potatoes and broth. Stir well and bring the soup to a simmer.
- Stir in the shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste.
- Serve the soup hot, topped with the crispy bacon.
