Ingredients

  • Assorted meats (beef, tripe, cow foot, and/or goat meat)
  • Palm oil
  • Assorted vegetables (ugu leaves, water leaves, spinach, and/or pumpkin leaves)
  • Stockfish
  • Dry fish
  • Ground crayfish
  • Scotch bonnet peppers
  • Onions
  • Seasoning cubes
  • Salt

Instructions

  1. Prepare the assorted meats by cleaning and cutting them into bite-sized pieces.
  2. Heat palm oil in a large pot over medium heat, then add chopped onions and sauté until translucent.
  3. Add the assorted meats to the pot and cook until browned.
  4. Stir in the ground crayfish, seasoning cubes, salt, and chopped scotch bonnet peppers.
  5. Pour in the stockfish and dry fish, then add water to cover the meats and simmer for 1 hour.
  6. Add the assorted vegetables to the pot and cook for an additional 10 minutes.
  7. Adjust seasoning if necessary and serve hot with your choice of swallow or rice.
