Owo Soup with Pounded Yam (Soupe d'Owo avec Pounded Yam)

Ingredients

  • 500g goat meat, cut into chunks
  • 2 cups palm oil
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 2 bell peppers, chopped
  • 2 cups spinach, chopped
  • 2 cups water or broth
  • Salt and pepper to taste
  • 4 cups yam flour
  • Water for boiling

Instructions

  1. Heat the palm oil in a large pot over medium heat.
  2. Add the onions and cook until translucent.
  3. Add the tomatoes and bell peppers, and cook until softened.
  4. Add the goat meat and cook until browned.
  5. Pour in the water or broth, cover the pot, and let it simmer for 45 minutes.
  6. Add the spinach and cook for an additional 5 minutes.
  7. Meanwhile, prepare the pounded yam by boiling water in a separate pot.
  8. Scoop the yam flour into the boiling water and stir continuously until it thickens and becomes smooth.
  9. Once the soup and pounded yam are ready, serve the soup over the pounded yam in bowls.
