Owo Soup with Pounded Yam (Soupe d'Owo avec Pounded Yam)
This traditional Benin Cuisine recipe combines the rich flavors of Owo Soup with the comforting texture of Pounded Yam. It's a hearty and satisfying dish that is perfect for a cozy family meal or special occasions.
Ingredients
- 500g goat meat, cut into chunks
- 2 cups palm oil
- 1 onion, chopped
- 3 tomatoes, chopped
- 2 bell peppers, chopped
- 2 cups spinach, chopped
- 2 cups water or broth
- Salt and pepper to taste
- 4 cups yam flour
- Water for boiling
Instructions
- Heat the palm oil in a large pot over medium heat.
- Add the onions and cook until translucent.
- Add the tomatoes and bell peppers, and cook until softened.
- Add the goat meat and cook until browned.
- Pour in the water or broth, cover the pot, and let it simmer for 45 minutes.
- Add the spinach and cook for an additional 5 minutes.
- Meanwhile, prepare the pounded yam by boiling water in a separate pot.
- Scoop the yam flour into the boiling water and stir continuously until it thickens and becomes smooth.
- Once the soup and pounded yam are ready, serve the soup over the pounded yam in bowls.
