Ox Trotters Meat Pie, also known as Mazondo Meat Pie, is a popular dish in Zimbabwean cuisine. This savory meat pie is filled with tender ox trotters and a flavorful mixture of spices, creating a delicious and hearty meal.
Ingredients
- 2 lbs ox trotters, cleaned and cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 cups beef broth
- 2 tbsp vegetable oil
- Pastry dough for pie crust
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the ox trotters to the pot and brown them on all sides.
- Stir in the ground cumin, paprika, dried thyme, salt, and pepper, ensuring the trotters are well coated with the spices.
- Pour in the beef broth, cover the pot, and simmer for 1.5 to 2 hours, or until the trotters are tender and the liquid has reduced to a thick sauce.
- Preheat the oven to 375°F (190°C).
- Roll out the pastry dough and line a pie dish with the bottom crust.
- Fill the pie with the cooked ox trotters and their sauce.
- Cover the pie with the top crust, seal the edges, and make a few slits on the top for steam to escape.
- Bake the pie in the preheated oven for 30-35 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
