Ox Trotters Meatballs (mazondo Meatballs)

Ingredients

  • 1 kg ox trotters, cleaned and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 egg
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups beef broth
  • 2 tbsp vegetable oil

Instructions

  1. In a large bowl, combine the ox trotters, onion, tomatoes, garlic, breadcrumbs, egg, coriander, cumin, paprika, salt, and pepper. Mix well to combine.
  2. Shape the mixture into meatballs and set aside.
  3. Heat the vegetable oil in a large pot over medium heat. Add the meatballs and brown on all sides.
  4. Pour in the beef broth and bring to a simmer. Cover and cook for 1 hour, or until the meatballs are tender.
  5. Serve the ox trotters meatballs hot, garnished with fresh herbs if desired.
