Ox Trotters Meatballs, also known as Mazondo Meatballs, are a popular dish in Zimbabwean cuisine. This recipe combines the rich flavors of ox trotters with the convenience of meatballs, making it a delicious and hearty meal.
Ingredients
- 1 kg ox trotters, cleaned and chopped
- 1 onion, finely chopped
- 2 tomatoes, grated
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 egg
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups beef broth
- 2 tbsp vegetable oil
Instructions
- In a large bowl, combine the ox trotters, onion, tomatoes, garlic, breadcrumbs, egg, coriander, cumin, paprika, salt, and pepper. Mix well to combine.
- Shape the mixture into meatballs and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the meatballs and brown on all sides.
- Pour in the beef broth and bring to a simmer. Cover and cook for 1 hour, or until the meatballs are tender.
- Serve the ox trotters meatballs hot, garnished with fresh herbs if desired.
