Ingredients
- 4 ox trotters, cleaned and cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 cups beef broth
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are translucent.
- Add the ox trotters to the pot and brown them on all sides.
- Stir in the curry powder, paprika, and dried thyme, and cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and beef broth to the pot. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 2 hours, or until the ox trotters are tender.
- Once the ox trotters are tender, remove the lid and continue to simmer for an additional 15 minutes to thicken the sauce.
- Serve the ox trotters melt hot, accompanied by sadza or rice.
