Ox Trotters Melt (mazondo Melt)

Ingredients

  • 4 ox trotters, cleaned and cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 cups beef broth
  • Salt and pepper to taste
  • 2 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are translucent.
  3. Add the ox trotters to the pot and brown them on all sides.
  4. Stir in the curry powder, paprika, and dried thyme, and cook for 2 minutes to toast the spices.
  5. Add the chopped tomatoes and beef broth to the pot. Season with salt and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 2 hours, or until the ox trotters are tender.
  7. Once the ox trotters are tender, remove the lid and continue to simmer for an additional 15 minutes to thicken the sauce.
  8. Serve the ox trotters melt hot, accompanied by sadza or rice.
