Ox Trotters Muffins (mazondo Muffins)

Ingredients

  • 2 lbs ox trotters, cleaned and chopped
  • 2 cups all-purpose flour
  • 1 cup cornmeal
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp dried thyme
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste
  • 4 cups beef broth

Instructions

  1. In a large pot, combine the ox trotters and beef broth. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the trotters are tender.
  2. In a separate bowl, mix together the flour, cornmeal, onion, tomatoes, garlic, cumin, paprika, thyme, cilantro, salt, and pepper.
  3. Once the trotters are tender, remove them from the broth and allow them to cool slightly. Shred the meat and discard any bones or excess fat.
  4. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  5. Combine the shredded trotters with the flour mixture, then spoon the batter into the prepared muffin tin.
  6. Bake for 25-30 minutes, or until the muffins are golden brown and cooked through.
  7. Allow the muffins to cool for a few minutes before serving.
