Ox Trotters Muffins (mazondo Muffins)
Ox Trotters Muffins, also known as Mazondo Muffins, are a unique and flavorful dish from Zimbabwean cuisine. These muffins are made with ox trotters, a popular ingredient in Zimbabwean cooking, and are perfect for a hearty breakfast or a savory snack.
Ingredients
- 2 lbs ox trotters, cleaned and chopped
- 2 cups all-purpose flour
- 1 cup cornmeal
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp dried thyme
- 1/2 cup chopped cilantro
- Salt and pepper to taste
- 4 cups beef broth
Instructions
- In a large pot, combine the ox trotters and beef broth. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the trotters are tender.
- In a separate bowl, mix together the flour, cornmeal, onion, tomatoes, garlic, cumin, paprika, thyme, cilantro, salt, and pepper.
- Once the trotters are tender, remove them from the broth and allow them to cool slightly. Shred the meat and discard any bones or excess fat.
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- Combine the shredded trotters with the flour mixture, then spoon the batter into the prepared muffin tin.
- Bake for 25-30 minutes, or until the muffins are golden brown and cooked through.
- Allow the muffins to cool for a few minutes before serving.
