Ingredients
- 2 lbs oxtail
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups tomato sauce
- 2 cups beef broth
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the oxtail and brown on all sides, then remove from the pot and set aside.
- Add the chopped onion to the pot and cook until softened.
- Stir in the minced garlic, paprika, cumin, salt, and black pepper, and cook for 1 minute.
- Pour in the tomato sauce and beef broth, then return the oxtail to the pot.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 3 hours or until the oxtail is tender.
- Skim off any excess fat from the surface before serving.
