Oxtail Soup Korean
This oxtail soup is a delicious Korean dish that is hearty and full of flavor. It's the perfect comfort food for a cozy night in.
Ingredients
- 3 pounds oxtail
- 8 cups water
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 daikon radish, peeled and chopped
- 3 green onions, chopped
- 1/4 cup soy sauce
- 2 tablespoons gochugaru (Korean red pepper flakes)
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Place the oxtail in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours, skimming off any foam that rises to the surface.
- Add the chopped onion, garlic, and daikon radish to the pot. Continue to simmer for an additional hour.
- Stir in the green onions, soy sauce, gochugaru, and sesame oil. Season with salt and pepper to taste.
- Simmer for another 15 minutes, then remove from heat.
- Serve the oxtail soup hot, garnished with additional green onions if desired.
