Ingredients

  • 3 pounds oxtail
  • 8 cups water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 daikon radish, peeled and chopped
  • 3 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons gochugaru (Korean red pepper flakes)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Place the oxtail in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours, skimming off any foam that rises to the surface.
  2. Add the chopped onion, garlic, and daikon radish to the pot. Continue to simmer for an additional hour.
  3. Stir in the green onions, soy sauce, gochugaru, and sesame oil. Season with salt and pepper to taste.
  4. Simmer for another 15 minutes, then remove from heat.
  5. Serve the oxtail soup hot, garnished with additional green onions if desired.
