Ingredients

  • 3 lbs oxtails
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup red wine
  • 4 cups beef broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the oxtails with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat.
  3. Add the oxtails and brown on all sides, then remove from the pot and set aside.
  4. Add the onion, garlic, carrots, and celery to the pot and cook until softened.
  5. Pour in the red wine and scrape up any browned bits from the bottom of the pot.
  6. Return the oxtails to the pot and add the beef broth and bay leaves.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 3 hours or until the oxtails are tender.
  8. Remove the oxtails from the pot and skim off any fat from the surface of the stew.
  9. Season the stew with salt and pepper to taste.
  10. Serve the oxtails with the stew and enjoy!
