Oxtails

Ingredients
- 3 lbs oxtails
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 4 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the oxtails with salt and pepper.
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the oxtails and brown on all sides, then remove from the pot and set aside.
- Add the onion, garlic, carrots, and celery to the pot and cook until softened.
- Pour in the red wine and scrape up any browned bits from the bottom of the pot.
- Return the oxtails to the pot and add the beef broth and bay leaves.
- Bring to a boil, then reduce heat to low, cover, and simmer for 3 hours or until the oxtails are tender.
- Remove the oxtails from the pot and skim off any fat from the surface of the stew.
- Season the stew with salt and pepper to taste.
