Ingredients
- 1 cup rice flour
- 1/2 cup water
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 cup fresh oysters
- 2 cloves garlic, minced
- 2 stalks green onions, chopped
- 1/4 cup cooking oil
Instructions
- In a bowl, mix the rice flour, water, eggs, salt, and white pepper to make the batter.
- Heat 2 tablespoons of cooking oil in a non-stick pan over medium heat.
- Add the minced garlic and stir-fry until fragrant.
- Add the oysters and cook for 1-2 minutes.
- Pour the batter over the oysters and cook for 2-3 minutes until the edges are crispy.
- Flip the omelette and cook for another 2-3 minutes.
- Garnish with chopped green onions before serving.
