Ingredients

  • 1 cup rice flour
  • 1/2 cup water
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 cup fresh oysters
  • 2 cloves garlic, minced
  • 2 stalks green onions, chopped
  • 1/4 cup cooking oil

Instructions

  1. In a bowl, mix the rice flour, water, eggs, salt, and white pepper to make the batter.
  2. Heat 2 tablespoons of cooking oil in a non-stick pan over medium heat.
  3. Add the minced garlic and stir-fry until fragrant.
  4. Add the oysters and cook for 1-2 minutes.
  5. Pour the batter over the oysters and cook for 2-3 minutes until the edges are crispy.
  6. Flip the omelette and cook for another 2-3 minutes.
  7. Garnish with chopped green onions before serving.
