Ingredients
- 1 cup oysters
- 3 large eggs
- 1/4 cup tapioca starch
- 1/4 cup sweet potato starch
- 1/2 cup water
- 1/4 cup chopped scallions
- 1/4 cup bean sprouts
- 1/4 cup cilantro
- 1/4 cup ketchup
- 1/4 cup sweet chili sauce
- 1/4 cup rice vinegar
- 1/4 cup cooking oil
- Salt and pepper to taste
Instructions
- In a bowl, mix the tapioca starch, sweet potato starch, and water to create a slurry. Set aside.
- In another bowl, beat the eggs and season with salt and pepper.
- Heat 2 tablespoons of cooking oil in a non-stick pan over medium heat.
- Add the oysters to the beaten eggs and mix well.
- Pour the egg and oyster mixture into the hot pan and spread it out evenly.
- Cook for 2-3 minutes until the bottom is golden and crispy.
- Flip the omelette and cook for another 2-3 minutes until the other side is golden and crispy.
- Transfer the omelette to a serving plate.
- In a small saucepan, combine the ketchup, sweet chili sauce, and rice vinegar. Heat the sauce over low heat until warm.
- Drizzle the warm sauce over the omelette.
- Garnish with chopped scallions, bean sprouts, and cilantro.
