Oyster Omelette Delight (蚵仔煎)

Ingredients

  • 1 cup oysters
  • 3 large eggs
  • 1/4 cup tapioca starch
  • 1/4 cup sweet potato starch
  • 1/2 cup water
  • 1/4 cup chopped scallions
  • 1/4 cup bean sprouts
  • 1/4 cup cilantro
  • 1/4 cup ketchup
  • 1/4 cup sweet chili sauce
  • 1/4 cup rice vinegar
  • 1/4 cup cooking oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the tapioca starch, sweet potato starch, and water to create a slurry. Set aside.
  2. In another bowl, beat the eggs and season with salt and pepper.
  3. Heat 2 tablespoons of cooking oil in a non-stick pan over medium heat.
  4. Add the oysters to the beaten eggs and mix well.
  5. Pour the egg and oyster mixture into the hot pan and spread it out evenly.
  6. Cook for 2-3 minutes until the bottom is golden and crispy.
  7. Flip the omelette and cook for another 2-3 minutes until the other side is golden and crispy.
  8. Transfer the omelette to a serving plate.
  9. In a small saucepan, combine the ketchup, sweet chili sauce, and rice vinegar. Heat the sauce over low heat until warm.
  10. Drizzle the warm sauce over the omelette.
  11. Garnish with chopped scallions, bean sprouts, and cilantro.
