Paal Kozhukattai (coconut Milk Pudding)
Paal Kozhukattai is a traditional South Indian dessert made with coconut milk and rice dumplings. This creamy and aromatic pudding is a popular sweet dish in Mangalurean cuisine.
Ingredients
- 1 cup rice flour
- 1 cup coconut milk
- 1/2 cup jaggery (or sugar)
- 1/4 tsp cardamom powder
- 2 cups water
- Pinch of salt
Instructions
- In a saucepan, heat 2 cups of water with a pinch of salt.
- Once the water comes to a boil, gradually add the rice flour while stirring continuously to avoid lumps. Cook until it forms a thick dough-like consistency. Remove from heat and let it cool.
- Divide the dough into small portions and shape them into small balls or dumplings.
- In another pot, heat the coconut milk and jaggery (or sugar) until the sweetener dissolves. Add cardamom powder for flavor.
- Gently drop the rice dumplings into the coconut milk mixture and simmer for 10-15 minutes until the dumplings are cooked and the pudding thickens.
- Paal Kozhukattai is ready to be served hot or cold.
