Paal Kozhukattai (coconut Milk Pudding)

Ingredients

  • 1 cup rice flour
  • 1 cup coconut milk
  • 1/2 cup jaggery (or sugar)
  • 1/4 tsp cardamom powder
  • 2 cups water
  • Pinch of salt

Instructions

  1. In a saucepan, heat 2 cups of water with a pinch of salt.
  2. Once the water comes to a boil, gradually add the rice flour while stirring continuously to avoid lumps. Cook until it forms a thick dough-like consistency. Remove from heat and let it cool.
  3. Divide the dough into small portions and shape them into small balls or dumplings.
  4. In another pot, heat the coconut milk and jaggery (or sugar) until the sweetener dissolves. Add cardamom powder for flavor.
  5. Gently drop the rice dumplings into the coconut milk mixture and simmer for 10-15 minutes until the dumplings are cooked and the pudding thickens.
  6. Paal Kozhukattai is ready to be served hot or cold.
