Ingredients

  • 1 cup Basmati rice
  • 4 cups whole milk
  • 1 cup coconut milk
  • 1 cup sugar
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (almonds, cashews, pistachios)
  • 2 tablespoons golden raisins

Instructions

  1. Wash the Basmati rice and soak it in water for 30 minutes. Drain the water and set aside.
  2. In a heavy-bottomed pan, bring the whole milk to a boil.
  3. Add the soaked rice to the boiling milk and simmer on low heat, stirring occasionally, until the rice is cooked and the milk has reduced to a creamy consistency (about 45 minutes).
  4. Stir in the coconut milk and sugar, and continue to cook for another 10 minutes.
  5. Add the cardamom powder, chopped nuts, and golden raisins. Cook for an additional 5 minutes.
  6. Remove from heat and let the paal payasam cool slightly before serving.
