Paal Payasam (coconut And Cardamom Rice Pudding)
Paal Payasam, also known as Coconut and Cardamom Rice Pudding, is a traditional Anglo-Indian dessert that is creamy, aromatic, and indulgent. This sweet and comforting pudding is made with simple ingredients and is perfect for any special occasion or festive celebration.
Ingredients
- 1 cup Basmati rice
- 4 cups whole milk
- 1 cup coconut milk
- 1 cup sugar
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, cashews, pistachios)
- 2 tablespoons golden raisins
Instructions
- Wash the Basmati rice and soak it in water for 30 minutes. Drain the water and set aside.
- In a heavy-bottomed pan, bring the whole milk to a boil.
- Add the soaked rice to the boiling milk and simmer on low heat, stirring occasionally, until the rice is cooked and the milk has reduced to a creamy consistency (about 45 minutes).
- Stir in the coconut milk and sugar, and continue to cook for another 10 minutes.
- Add the cardamom powder, chopped nuts, and golden raisins. Cook for an additional 5 minutes.
- Remove from heat and let the paal payasam cool slightly before serving.
