Paal Payasam (coconut Rice Pudding)
Paal Payasam, also known as Coconut Rice Pudding, is a traditional dessert from Anglo-Indian cuisine. This creamy and aromatic pudding is made with rice, milk, and coconut, and is often flavored with cardamom and garnished with nuts.
Ingredients
- 1 cup basmati rice
- 4 cups whole milk
- 1 cup coconut milk
- 1 cup sugar
- 1/2 teaspoon cardamom powder
- 2 tablespoons ghee (clarified butter)
- 10-12 cashew nuts, chopped
- 10-12 golden raisins
Instructions
- Wash the rice and soak it in water for 30 minutes. Drain the water and set the rice aside.
- In a heavy-bottomed pan, heat the ghee and roast the cashew nuts and golden raisins until they turn golden. Remove and set aside.
- In the same pan, add the soaked rice and sauté for 2-3 minutes.
- Pour in the whole milk and coconut milk, and bring to a boil. Then, reduce the heat and let it simmer, stirring occasionally, until the rice is fully cooked and the mixture thickens (about 45-50 minutes).
- Once the rice is cooked, add the sugar and cardamom powder. Stir well and cook for another 5-10 minutes until the sugar is fully dissolved and the pudding reaches a creamy consistency.
- Turn off the heat and garnish with the roasted cashews and raisins.
- Serve the Paal Payasam warm or chilled.
