Pacific Paradise Poke Bowl

Ingredients

  • 1 lb sushi-grade ahi tuna, cubed
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1/2 tsp sriracha
  • 1 cup cooked white rice
  • 1 cup mixed salad greens
  • 1/2 cup sliced cucumber
  • 1/2 cup diced mango
  • 1/4 cup sliced radishes
  • 1/4 cup edamame
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds

Instructions

  1. In a bowl, combine the cubed tuna, soy sauce, sesame oil, rice vinegar, and sriracha. Toss to coat the tuna and marinate for 10 minutes.
  2. Divide the cooked rice among serving bowls. Top with mixed greens, cucumber, mango, radishes, edamame, and marinated tuna.
