  • 1 block of firm tofu, drained and cubed

  • 1 red bell pepper, thinly sliced
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 1/4 cup crushed peanuts
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Soak the rice noodles in hot water according to package instructions, then drain and set aside.
