Pad Thai Spring Rolls are a delicious fusion of Thai and Australasian cuisine, combining the flavors of traditional Pad Thai with the convenience of a handheld spring roll. These spring rolls are perfect for a light lunch, appetizer, or snack.
Ingredients
- 12 spring roll wrappers
- 1 cup cooked rice noodles
- 1 cup bean sprouts
- 1 carrot, julienned
- 1/2 cup tofu, diced
- 2 tablespoons chopped peanuts
- 2 tablespoons chopped cilantro
- 1/4 cup Pad Thai sauce
- 1 tablespoon vegetable oil
Instructions
- Soak the rice noodles in hot water for 5 minutes, then drain and set aside.
- Heat the vegetable oil in a pan over medium heat. Add the tofu and cook until golden brown.
- Add the bean sprouts, julienned carrot, and cooked rice noodles to the pan. Stir in the Pad Thai sauce and cook for 2-3 minutes.
- Remove the pan from the heat and let the mixture cool slightly.
- Place a spring roll wrapper on a clean surface. Spoon a portion of the Pad Thai mixture onto the wrapper. Sprinkle with chopped peanuts and cilantro.
- Roll the spring roll, folding in the sides as you go. Seal the edge with a bit of water.
- Repeat with the remaining wrappers and filling.
- Serve the Pad Thai Spring Rolls with additional Pad Thai sauce for dipping.
