Ingredients

  • 12 spring roll wrappers
  • 1 cup cooked rice noodles
  • 1 cup bean sprouts
  • 1 carrot, julienned
  • 1/2 cup tofu, diced
  • 2 tablespoons chopped peanuts
  • 2 tablespoons chopped cilantro
  • 1/4 cup Pad Thai sauce
  • 1 tablespoon vegetable oil

Instructions

  1. Soak the rice noodles in hot water for 5 minutes, then drain and set aside.
  2. Heat the vegetable oil in a pan over medium heat. Add the tofu and cook until golden brown.
  3. Add the bean sprouts, julienned carrot, and cooked rice noodles to the pan. Stir in the Pad Thai sauce and cook for 2-3 minutes.
  4. Remove the pan from the heat and let the mixture cool slightly.
  5. Place a spring roll wrapper on a clean surface. Spoon a portion of the Pad Thai mixture onto the wrapper. Sprinkle with chopped peanuts and cilantro.
  6. Roll the spring roll, folding in the sides as you go. Seal the edge with a bit of water.
  7. Repeat with the remaining wrappers and filling.
  8. Serve the Pad Thai Spring Rolls with additional Pad Thai sauce for dipping.
