Ingredients
- 6 slices bacon, chopped
- 1 onion, diced
- 3 carrots, sliced

Instructions

- Stir in the minced garlic and cook for an additional 1-2 minutes.
- Pour in the chicken broth and add the diced potatoes and bay leaf. Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste.
- Remove the bay leaf and discard. Serve the soup hot, garnished with the crispy bacon and chopped fresh parsley.
