Paella A La Andaluza (andalusian-style Paella)
Paella a la Andaluza is a traditional dish from the Andalusian region of Spain, known for its rich flavors and vibrant colors. This recipe combines the freshest seafood, flavorful chorizo, and aromatic saffron to create a truly authentic Andalusian-style paella.
Ingredients
- 1 cup bomba rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 100g chorizo, sliced
- 500g mixed seafood (prawns, mussels, squid)
- 1 tsp smoked paprika
- 1/2 tsp saffron threads
- 4 cups fish or chicken stock
- 1/4 cup fresh parsley, chopped
- Lemon wedges, for serving
- Extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a paella pan, heat the olive oil over medium heat. Add the onion, garlic, and red pepper, and cook until softened.
- Add the chorizo and cook for 2-3 minutes until it releases its oils.
- Stir in the rice, paprika, and saffron, and cook for 1 minute.
- Pour in the stock and bring to a simmer. Cook for 15 minutes, stirring occasionally.
- Add the mixed seafood and continue to cook for another 10 minutes or until the rice is tender and the seafood is cooked through.
- Season with salt and pepper, and sprinkle with chopped parsley. Serve with lemon wedges.
