Ingredients

  • 1 cup bomba rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 100g chorizo, sliced
  • 500g mixed seafood (prawns, mussels, squid)
  • 1 tsp smoked paprika
  • 1/2 tsp saffron threads
  • 4 cups fish or chicken stock
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a paella pan, heat the olive oil over medium heat. Add the onion, garlic, and red pepper, and cook until softened.
  2. Add the chorizo and cook for 2-3 minutes until it releases its oils.
  3. Stir in the rice, paprika, and saffron, and cook for 1 minute.
  4. Pour in the stock and bring to a simmer. Cook for 15 minutes, stirring occasionally.
  5. Add the mixed seafood and continue to cook for another 10 minutes or until the rice is tender and the seafood is cooked through.
  6. Season with salt and pepper, and sprinkle with chopped parsley. Serve with lemon wedges.
