- 2 cups Bomba or Calasparra rice
- 4 cups fish or seafood broth
- 1 onion, diced

- 4 cloves garlic, minced
- 1 tomato, grated
- 1 teaspoon sweet paprika
- 1/2 teaspoon saffron threads
- 1/4 cup extra virgin olive oil

Instructions
- In a paella pan, heat the olive oil over medium heat. Add the diced onion, sliced bell pepper, and minced garlic. Sauté until the vegetables are softened.
- Add the grated tomato, sweet paprika, and saffron threads to the pan. Cook for a few minutes until the tomato has reduced and the spices are fragrant.
