Ingredients

  • 1 cup bomba rice
  • 1 lb large shrimp, peeled and deveined
  • 6 oz spicy chorizo, sliced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tomato, diced
  • 1 tsp smoked paprika
  • 1/2 tsp saffron threads
  • 4 cups chicken broth
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a paella pan, cook the chorizo over medium heat until it releases its oils. Remove the chorizo and set aside.
  2. Add the shrimp to the pan and cook until pink. Remove the shrimp and set aside.
  3. Sauté the onion, garlic, and red bell pepper in the same pan until softened.
  4. Add the diced tomato, smoked paprika, and saffron threads. Cook for a few minutes.
  5. Stir in the bomba rice and cook for 1-2 minutes.
  6. Pour in the chicken broth and bring to a simmer. Cook for 15-20 minutes until the rice is almost tender.
  7. Return the chorizo and shrimp to the pan and cook for an additional 5 minutes.
  8. Season with salt and pepper, and sprinkle with fresh parsley.
  9. Serve the paella with lemon wedges on the side.
