Ingredients
- 1 cup bomba rice
- 1 lb large shrimp, peeled and deveined
- 6 oz spicy chorizo, sliced
- 1 onion, diced
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tomato, diced
- 1 tsp smoked paprika
- 1/2 tsp saffron threads
- 4 cups chicken broth
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a paella pan, cook the chorizo over medium heat until it releases its oils. Remove the chorizo and set aside.
- Add the shrimp to the pan and cook until pink. Remove the shrimp and set aside.
- Sauté the onion, garlic, and red bell pepper in the same pan until softened.
- Add the diced tomato, smoked paprika, and saffron threads. Cook for a few minutes.
- Stir in the bomba rice and cook for 1-2 minutes.
- Pour in the chicken broth and bring to a simmer. Cook for 15-20 minutes until the rice is almost tender.
- Return the chorizo and shrimp to the pan and cook for an additional 5 minutes.
- Season with salt and pepper, and sprinkle with fresh parsley.
- Serve the paella with lemon wedges on the side.
