Ingredients
- 1/4 cup olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 tomato, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 2 cups short-grain rice
- 4 cups seafood or chicken broth
- 1 pound mixed seafood (such as shrimp, mussels, and clams)
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the red bell pepper, tomato, smoked paprika, and saffron. Cook for a few minutes until the vegetables are softened and the spices are fragrant.
- Stir in the rice, then add the broth. Bring to a simmer and cook for about 15-20 minutes, or until the rice is almost tender and most of the liquid has been absorbed.
- Add the mixed seafood on top of the rice, cover the pan, and cook for another 10 minutes, or until the seafood is cooked through and the rice is tender.
- Season with salt and pepper, and serve with lemon wedges.
