Ingredients

  • 1/2 teaspoon saffron threads
  • 2 cups short-grain rice
  • 4 cups seafood or chicken broth
  • 1 pound mixed seafood (such as shrimp, mussels, and clams)
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the red bell pepper, tomato, smoked paprika, and saffron. Cook for a few minutes until the vegetables are softened and the spices are fragrant.
  3. Stir in the rice, then add the broth. Bring to a simmer and cook for about 15-20 minutes, or until the rice is almost tender and most of the liquid has been absorbed.
  4. Add the mixed seafood on top of the rice, cover the pan, and cook for another 10 minutes, or until the seafood is cooked through and the rice is tender.
  5. Season with salt and pepper, and serve with lemon wedges.
