Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb squid, cleaned and sliced into rings
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1 1/2 cups Arborio rice
- 4 cups seafood or chicken broth
- 1 teaspoon saffron threads
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup chopped parsley
- 1 lemon, cut into wedges
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the red bell pepper and cherry tomatoes, and cook for a few minutes until they start to soften.
- Stir in the Arborio rice, saffron, paprika, and cayenne pepper, and cook for 1-2 minutes to toast the rice and spices.
- Pour in the seafood or chicken broth, and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
- Nestle the shrimp, mussels, and squid into the rice mixture, cover the pan, and cook for an additional 5-7 minutes until the seafood is cooked through and the mussels have opened.
- Remove from heat and let the paella rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
