Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned and debearded
  • 1 lb squid, cleaned and sliced into rings
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 1/2 cups Arborio rice
  • 4 cups seafood or chicken broth
  • 1 teaspoon saffron threads
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup chopped parsley
  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the red bell pepper and cherry tomatoes, and cook for a few minutes until they start to soften.
  3. Stir in the Arborio rice, saffron, paprika, and cayenne pepper, and cook for 1-2 minutes to toast the rice and spices.
  4. Pour in the seafood or chicken broth, and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
  5. Nestle the shrimp, mussels, and squid into the rice mixture, cover the pan, and cook for an additional 5-7 minutes until the seafood is cooked through and the mussels have opened.
  6. Remove from heat and let the paella rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
