Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb squid, cleaned and sliced into rings
- 1 lb white fish fillets, cut into chunks
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup frozen peas
- 2 cups Arborio rice
- 4 cups chicken or seafood broth
- 1 teaspoon saffron threads
- 1 teaspoon smoked paprika
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large paella pan or skillet, heat some olive oil over medium heat. Add the shrimp, mussels, squid, and white fish. Cook for a few minutes until the seafood is just cooked through, then remove from the pan and set aside.
- In the same pan, add a bit more olive oil if needed. Sauté the onion, garlic, and red bell pepper until softened.
- Stir in the Arborio rice, saffron, and smoked paprika, and cook for a couple of minutes to toast the rice.
- Pour in the chicken or seafood broth and bring to a simmer. Cook for about 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid has been absorbed.
- Return the cooked seafood to the pan, along with the frozen peas. Cook for an additional 5-10 minutes, or until the rice is fully cooked and the seafood is heated through.
- Season with salt and pepper to taste, and sprinkle with chopped parsley. Serve the paella with lemon wedges on the side.
