Ingredients

  • 1 lb squid, cleaned and sliced into rings
  • 1 lb white fish fillets, cut into chunks

  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 2 cups Arborio rice
  • 4 cups chicken or seafood broth
  • 1 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a large paella pan or skillet, heat some olive oil over medium heat. Add the shrimp, mussels, squid, and white fish. Cook for a few minutes until the seafood is just cooked through, then remove from the pan and set aside.
  2. In the same pan, add a bit more olive oil if needed. Sauté the onion, garlic, and red bell pepper until softened.
  3. Stir in the Arborio rice, saffron, and smoked paprika, and cook for a couple of minutes to toast the rice.
  4. Pour in the chicken or seafood broth and bring to a simmer. Cook for about 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid has been absorbed.
  5. Return the cooked seafood to the pan, along with the frozen peas. Cook for an additional 5-10 minutes, or until the rice is fully cooked and the seafood is heated through.
  6. Season with salt and pepper to taste, and sprinkle with chopped parsley. Serve the paella with lemon wedges on the side.
