  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1/2 cup green peas
  • 4 cups seafood or fish stock
  • 1/2 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • Lemon wedges for serving

Instructions

  1. In a paella pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the grated tomatoes and minced garlic to the pan. Cook for a few minutes until the tomatoes have reduced and the mixture is fragrant.
  3. Stir in the sliced red bell pepper and green peas. Cook for another 2-3 minutes.
  4. Add the rice to the pan and stir to coat it with the vegetable mixture.
  5. Pour in the seafood or fish stock. Sprinkle the saffron threads and smoked paprika over the rice. Season with salt and pepper.
