Paella De Mariscos (honduran Seafood Paella)

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb squid, cleaned and sliced into rings
  • 1 lb mussels, cleaned and debearded
  • 1 lb clams, scrubbed
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, diced
  • 2 cups rice
  • 4 cups seafood or chicken broth
  • 1 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. In a large paella pan or skillet, heat some olive oil over medium heat. Add the shrimp, squid, mussels, and clams. Cook until the shrimp turns pink and the mussels and clams start to open. Remove the seafood from the pan and set aside.
  2. In the same pan, add a bit more olive oil if needed. Sauté the onion, garlic, and bell peppers until softened.
  3. Add the diced tomatoes and cook until they start to break down.
  4. Stir in the rice, saffron, and smoked paprika, coating the rice with the vegetable mixture.
  5. Pour in the seafood or chicken broth. Bring to a simmer and cook for about 15-20 minutes, or until the rice is almost tender and most of the liquid has been absorbed.
  6. Arrange the cooked seafood on top of the rice. Cover the pan and continue to cook for another 10 minutes, or until the rice is fully cooked and the seafood is heated through.
  7. Season with salt and pepper, and sprinkle with chopped parsley. Serve with lemon wedges on the side.
