Ingredients

  • 2 cups short-grain rice
  • 4 cups seafood or chicken broth

  • 1 pound mussels, cleaned and debearded
  • 1 pound clams, cleaned
  • 1 pound large shrimp, peeled and deveined
  • 1/2 pound calamari, sliced into rings
  • 1/2 cup frozen peas
  • Lemon wedges for serving

Instructions

  1. In a paella pan or large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  2. Add the sliced bell peppers and diced tomato to the pan, and cook for 5 minutes until the vegetables are softened.
  3. Stir in the short-grain rice and saffron threads, and cook for 2 minutes to toast the rice.
  4. Pour in the seafood or chicken broth, and bring the mixture to a simmer. Cook for 10 minutes, stirring occasionally.
  5. Nestle the mussels, clams, shrimp, and calamari into the rice mixture. Cover the pan and cook for 10-15 minutes, or until the seafood is cooked through and the rice is tender.
  6. Sprinkle the frozen peas over the paella, cover, and cook for an additional 5 minutes.
  7. Remove the paella from the heat and let it rest for 5 minutes before serving. Garnish with fresh parsley and serve with lemon wedges.
