Ingredients

  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 red bell pepper, sliced
  • 1 cup green peas
  • 2 cups short-grain rice
  • 4 cups seafood broth
  • 1 teaspoon saffron threads
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Instructions

  1. In a large paella pan or skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the tomatoes, bell pepper, and green peas. Cook for a few minutes until the vegetables are slightly softened.
  3. Stir in the rice, saffron, and paprika, and cook for 1-2 minutes to toast the rice.
  4. Pour in the seafood broth and bring to a simmer. Season with salt and pepper to taste.
  5. Add the shrimp, squid, and mussels to the pan, arranging them evenly. Cover the pan and cook for 15-20 minutes, or until the rice is tender and the seafood is cooked through.
