Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb squid, cleaned and sliced into rings
- 1 lb mussels, cleaned and debearded
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 1 cup green peas
- 2 cups short-grain rice
- 4 cups seafood broth
- 1 teaspoon saffron threads
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Lemon wedges for serving
Instructions
- In a large paella pan or skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the tomatoes, bell pepper, and green peas. Cook for a few minutes until the vegetables are slightly softened.
- Stir in the rice, saffron, and paprika, and cook for 1-2 minutes to toast the rice.
- Pour in the seafood broth and bring to a simmer. Season with salt and pepper to taste.
- Add the shrimp, squid, and mussels to the pan, arranging them evenly. Cover the pan and cook for 15-20 minutes, or until the rice is tender and the seafood is cooked through.
- Remove from heat and let the paella rest for 5 minutes before serving. Garnish with lemon wedges.
