Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup diced tomatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 2 cups short-grain rice
  • 4 cups chicken or vegetable broth
  • 1 pound chicken thighs, cut into pieces
  • 1/2 pound chorizo sausage, sliced
  • 1/2 pound shrimp, peeled and deveined
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat the olive oil in a large paella pan or skillet over medium heat.
  2. Add the onion and garlic, and cook until softened.
  3. Stir in the bell peppers and cook for a few minutes.
  4. Add the diced tomatoes, smoked paprika, and saffron, and cook for another 5 minutes.
  5. Stir in the rice, then add the broth, chicken, and chorizo. Bring to a simmer and cook for 15 minutes.
  6. Add the shrimp and cook for an additional 5-7 minutes, until the rice is tender and the shrimp is pink.
  7. Season with salt and pepper, and serve with lemon wedges.
