Paella dels Pirineus, or Pyrenees Paella, is a traditional dish from the small country of Andorra, nestled in the Pyrenees mountains between France and Spain. This hearty and flavorful dish is a perfect representation of Andorran cuisine, combining local ingredients with Spanish influences.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup diced tomatoes
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 2 cups short-grain rice
- 4 cups chicken or vegetable broth
- 1 pound chicken thighs, cut into pieces
- 1/2 pound chorizo sausage, sliced
- 1/2 pound shrimp, peeled and deveined
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the onion and garlic, and cook until softened.
- Stir in the bell peppers and cook for a few minutes.
- Add the diced tomatoes, smoked paprika, and saffron, and cook for another 5 minutes.
- Stir in the rice, then add the broth, chicken, and chorizo. Bring to a simmer and cook for 15 minutes.
- Add the shrimp and cook for an additional 5-7 minutes, until the rice is tender and the shrimp is pink.
- Season with salt and pepper, and serve with lemon wedges.
