Ingredients
- 1 cup Arborio rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1/2 teaspoon saffron threads
- 4 cups seafood or chicken broth
- 1/2 cup white wine
- 1 lb mixed seafood (shrimp, mussels, clams)
- 1/2 cup frozen peas
- 1 lemon, cut into wedges
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Stir in the saffron threads and Arborio rice, coating the rice with the oil and saffron.
- Pour in the white wine and let it simmer until it's mostly absorbed.
- Gradually add the seafood or chicken broth, stirring occasionally, and cook for about 15-20 minutes until the rice is almost tender.
- Add the mixed seafood and frozen peas, gently pushing them into the rice. Cook for another 5-7 minutes until the seafood is cooked through.
- Season with salt and pepper to taste. Garnish with lemon wedges before serving.
