  • 1 lb mixed seafood (shrimp, mussels, clams)

  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
  2. Stir in the saffron threads and Arborio rice, coating the rice with the oil and saffron.
  3. Pour in the white wine and let it simmer until it's mostly absorbed.
  4. Gradually add the seafood or chicken broth, stirring occasionally, and cook for about 15-20 minutes until the rice is almost tender.
