Ingredients

  • 8 lamb chops
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges, for serving

Instructions

  1. In a small bowl, mix together the olive oil, garlic, oregano, salt, and black pepper to create the marinade.
  2. Place the lamb chops in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chops. Refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Remove the lamb chops from the marinade and discard the excess marinade.
  5. Grill the lamb chops for 3-4 minutes per side, or to your desired level of doneness.
  6. Remove from the grill and let the chops rest for a few minutes before serving.
  7. Serve the paidakia with lemon wedges on the side.
