Palak Aloo (creamy Spinach And Potato Curry)

Ingredients

  • 2 cups fresh spinach, washed and chopped
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 cup water

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add minced garlic and grated ginger, and sauté for a minute.
  3. Stir in the pureed tomatoes, turmeric powder, coriander powder, garam masala, red chili powder, and salt. Cook until the oil separates from the masala.
  4. Add the diced potatoes and chopped spinach. Mix well and cook for 5 minutes.
  5. Pour in the water, cover the pan, and let the curry simmer until the potatoes are tender.
  6. Stir in the heavy cream and simmer for another 5 minutes.
  7. Garnish with fresh coriander leaves and serve hot with rice or naan.
