Palak Chana (chickpea And Spinach Stew)

Ingredients

  • 2 cups chickpeas, cooked
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 4 cups spinach, chopped
  • 1 cup water

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add minced garlic and grated ginger, and sauté for a minute.
  3. Next, add the chopped tomatoes and cook until they turn soft and the oil separates.
  4. Stir in the coriander powder, turmeric powder, red chili powder, garam masala, and salt. Cook for a couple of minutes.
  5. Add the cooked chickpeas and mix well with the masala.
  6. Pour in the water and bring the mixture to a simmer. Let it cook for 10 minutes.
  7. Add the chopped spinach and cook until wilted.
  8. Adjust the seasoning if needed and serve hot.
