Palak Paneer (creamy Palak Paneer)

Ingredients

  • 2 bunches of fresh spinach, washed and chopped
  • 200g paneer, cubed
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, chopped
  • 1-inch ginger, grated
  • 3 cloves of garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 cup heavy cream
  • Salt to taste
  • 2 tablespoons ghee or oil

Instructions

  1. Blanch the spinach in boiling water for 2 minutes, then drain and transfer to a bowl of ice water. Drain again and blend into a smooth puree.
  2. Heat ghee or oil in a pan and add cumin seeds. Once they splutter, add chopped onions, green chilies, ginger, and garlic. Sauté until the onions are golden brown.
  3. Add the tomato puree and cook until the oil separates from the masala.
  4. Add garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
  5. Add the spinach puree and cook for 5 minutes. Then add the cubed paneer and cook for another 2-3 minutes.
  6. Pour in the heavy cream and mix well. Cook for an additional 2 minutes, then remove from heat.
  7. Palak Paneer is ready to be served hot with naan or rice.
