Palauan Beef Kare-kare

Ingredients
- 2 lbs beef, cut into cubes
- 1 cup peanut butter
- 1 eggplant, sliced
- 1 bundle string beans, cut into 2-inch pieces
- 1 banana heart, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons annatto powder
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Sauté the garlic and onions until fragrant.
- Add the beef cubes and cook until browned on all sides.
- Stir in the peanut butter and annatto powder, then pour in the beef broth. Bring to a boil, then reduce heat and simmer for 1.5 hours or until the beef is tender.
- Add the eggplant, string beans, and banana heart. Cook for an additional 10 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve the Palauan Beef Kare-Kare hot with steamed rice.
