Ingredients

  • 2 lbs beef, cut into cubes
  • 1 cup peanut butter
  • 1 eggplant, sliced
  • 1 bundle string beans, cut into 2-inch pieces
  • 1 banana heart, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons annatto powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Sauté the garlic and onions until fragrant.
  2. Add the beef cubes and cook until browned on all sides.
  3. Stir in the peanut butter and annatto powder, then pour in the beef broth. Bring to a boil, then reduce heat and simmer for 1.5 hours or until the beef is tender.
  4. Add the eggplant, string beans, and banana heart. Cook for an additional 10 minutes or until the vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Serve the Palauan Beef Kare-Kare hot with steamed rice.
