Palauan Beef Mechado

Ingredients
- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup tomato sauce
- 1/2 cup soy sauce
- 1/4 cup vinegar
- 1 cup beef broth
- 2 bay leaves
- 1 tsp sugar
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Sear the beef cubes until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, sauté the onions and garlic until fragrant.
- Pour in the tomato sauce, soy sauce, vinegar, and beef broth. Stir to combine.
- Add the seared beef back into the pot. Toss in the bay leaves and sugar. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust the seasoning if needed. Serve the Palauan Beef Mechado hot with steamed rice.
