Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1 cup beef broth
  • 2 bay leaves
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Sear the beef cubes until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, sauté the onions and garlic until fragrant.
  3. Pour in the tomato sauce, soy sauce, vinegar, and beef broth. Stir to combine.
  4. Add the seared beef back into the pot. Toss in the bay leaves and sugar. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  6. Adjust the seasoning if needed. Serve the Palauan Beef Mechado hot with steamed rice.
