Palauan Chicken Curry

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the chicken pieces to the pot and cook until they are browned on all sides.
  3. Stir in the curry powder, turmeric, cumin, coriander, and chili powder. Cook for 2 minutes to toast the spices.
  4. Add the chopped tomatoes and cook for another 5 minutes, stirring occasionally.
  5. Pour in the coconut milk and season with salt and pepper. Bring the curry to a simmer and let it cook for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Garnish with fresh cilantro before serving.
