Palauan Chicken Mechado

Ingredients
- 2 lbs chicken, cut into serving pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tomatoes, chopped
- 1 cup tomato sauce
- 1 cup chicken broth
- 3 tbsp soy sauce
- 2 tbsp vinegar
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt and pepper.
- In a large pot, heat some oil over medium heat. Sear the chicken pieces until golden brown. Remove and set aside.
- In the same pot, sauté the onions, garlic, and bell pepper until softened.
- Add the tomatoes, tomato sauce, chicken broth, soy sauce, vinegar, and bay leaf. Stir to combine.
- Return the chicken pieces to the pot. Cover and simmer for 45 minutes to 1 hour, or until the chicken is tender.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Palauan Chicken Mechado hot with steamed rice.
