Palauan Chicken Mechado

Ingredients

  • 2 lbs chicken, cut into serving pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tomatoes, chopped
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 3 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. In a large pot, heat some oil over medium heat. Sear the chicken pieces until golden brown. Remove and set aside.
  3. In the same pot, sauté the onions, garlic, and bell pepper until softened.
  4. Add the tomatoes, tomato sauce, chicken broth, soy sauce, vinegar, and bay leaf. Stir to combine.
  5. Return the chicken pieces to the pot. Cover and simmer for 45 minutes to 1 hour, or until the chicken is tender.
  6. Adjust the seasoning with salt and pepper, if needed.
  7. Serve the Palauan Chicken Mechado hot with steamed rice.
