Palauan Chicken Sinigang

Ingredients
- 1 whole chicken, cut into pieces
- 8 cups water
- 1 onion, quartered
- 2 tomatoes, quartered
- 1 radish, sliced
- 1 eggplant, sliced
- 1 cup string beans, cut into 2-inch pieces
- 2 cups spinach leaves
- 1 packet sinigang mix
- Fish sauce, to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the chicken pieces, onion, and tomatoes. Simmer for 30 minutes.
- Add the radish, eggplant, and string beans. Cook for another 10 minutes.
- Stir in the sinigang mix and fish sauce. Simmer for 5 minutes.
- Add the spinach leaves and cook for an additional 2 minutes.
- Adjust the seasoning to taste and serve hot.
