Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups water
  • 1 onion, quartered
  • 2 tomatoes, quartered
  • 1 radish, sliced
  • 1 eggplant, sliced
  • 1 cup string beans, cut into 2-inch pieces
  • 2 cups spinach leaves
  • 1 packet sinigang mix
  • Fish sauce, to taste

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the chicken pieces, onion, and tomatoes. Simmer for 30 minutes.
  3. Add the radish, eggplant, and string beans. Cook for another 10 minutes.
  4. Stir in the sinigang mix and fish sauce. Simmer for 5 minutes.
  5. Add the spinach leaves and cook for an additional 2 minutes.
  6. Adjust the seasoning to taste and serve hot.
