Palauan Chicken Tinola

Ingredients
- 1 whole chicken, cut into pieces
- 1 small green papaya, peeled, seeded, and cut into wedges
- 2 cups spinach leaves
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 4 cups water
- Fish sauce, to taste
- Ground black pepper, to taste
Instructions
- In a large pot, sauté the garlic, ginger, and onion until fragrant.
- Add the chicken pieces and cook until lightly browned.
- Pour in the water and bring to a boil. Simmer for 20 minutes.
- Add the papaya and cook for another 10 minutes or until the chicken is tender.
- Season with fish sauce and ground black pepper to taste.
- Add the spinach and cook for 2 minutes or until wilted.
- Serve hot and enjoy!
