Ingredients

  • 1 whole chicken, cut into pieces
  • 1 small green papaya, peeled, seeded, and cut into wedges
  • 2 cups spinach leaves
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 4 cups water
  • Fish sauce, to taste
  • Ground black pepper, to taste

Instructions

  1. In a large pot, sauté the garlic, ginger, and onion until fragrant.
  2. Add the chicken pieces and cook until lightly browned.
  3. Pour in the water and bring to a boil. Simmer for 20 minutes.
  4. Add the papaya and cook for another 10 minutes or until the chicken is tender.
  5. Season with fish sauce and ground black pepper to taste.
  6. Add the spinach and cook for 2 minutes or until wilted.
  7. Serve hot and enjoy!
