Palauan Fish Mechado

Ingredients

  • 1 lb white fish fillets
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tomatoes, diced
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/2 cup water
  • 2 tbsp cooking oil
  • Salt and pepper to taste

Instructions

  1. Season the fish fillets with salt and pepper.
  2. In a large pan, heat the cooking oil over medium heat.
  3. Sear the fish fillets for 2-3 minutes on each side, then remove from the pan and set aside.
  4. In the same pan, sauté the garlic, onion, and bell pepper until fragrant.
  5. Add the diced tomatoes and cook until they start to soften.
  6. Pour in the soy sauce, vinegar, and water. Stir to combine.
  7. Return the fish fillets to the pan and simmer for 10-15 minutes, or until the fish is cooked through and the sauce has thickened.
  8. Adjust the seasoning with salt and pepper, if needed.
  9. Serve the Palauan Fish Mechado hot with steamed rice.
