Ingredients
- 3 cups cooked rice
- 1 cup diced pineapple
- 1/2 cup diced carrots

- 2 eggs, beaten

- 2 tablespoons vegetable oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger powder

Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
- Heat the remaining oil in the skillet and add the carrots, peas, and bell peppers. Cook for 3-4 minutes until slightly tender.
- Stir in the cooked rice, pineapple, soy sauce, garlic powder, and ginger powder. Cook for an additional 3-4 minutes, stirring frequently.
- Add the scrambled eggs back to the skillet and stir to combine. Season with salt and pepper to taste.
