Palauan Pineapple Fried Rice

Ingredients

  • 3 cups cooked rice
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
  3. Heat the remaining oil in the skillet and add the carrots, peas, and bell peppers. Cook for 3-4 minutes until slightly tender.
  4. Stir in the cooked rice, pineapple, soy sauce, garlic powder, and ginger powder. Cook for an additional 3-4 minutes, stirring frequently.
  5. Add the scrambled eggs back to the skillet and stir to combine. Season with salt and pepper to taste.
  6. Remove from heat and serve the Palauan Pineapple Fried Rice hot.
