Palauan Pork Kare-kare
Palauan Pork Kare-Kare is a traditional dish from Palauan cuisine that features tender pork cooked in a rich and flavorful peanut sauce.
Ingredients
- 2 lbs pork shoulder, cubed
- 1 cup peanut butter
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 eggplant, sliced
- 1 bundle string beans, cut into 2-inch pieces
- 4 cups water
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onions and garlic until fragrant.
- Add the pork and cook until browned.
- Stir in the peanut butter and water, then bring to a boil.
- Reduce heat and simmer for 30 minutes, or until the pork is tender.
- Add the eggplant and string beans, and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
