Palauan Pork Mechado

Ingredients

  • 2 lbs pork shoulder, cut into cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1 cup water
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Sear the pork cubes until browned on all sides. Remove the pork from the pot and set aside.
  2. In the same pot, sauté the onions and garlic until fragrant.
  3. Pour in the tomato sauce, soy sauce, vinegar, and water. Stir to combine.
  4. Add the seared pork back into the pot. Toss in the bay leaves and season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour or until the pork is tender.
  6. Once the pork is tender, taste and adjust the seasoning if needed.
  7. Serve the Palauan Pork Mechado hot with steamed rice.
