Palauan Pork Mechado

Ingredients
- 2 lbs pork shoulder, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 cup water
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Sear the pork cubes until browned on all sides. Remove the pork from the pot and set aside.
- In the same pot, sauté the onions and garlic until fragrant.
- Pour in the tomato sauce, soy sauce, vinegar, and water. Stir to combine.
- Add the seared pork back into the pot. Toss in the bay leaves and season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 hour or until the pork is tender.
- Once the pork is tender, taste and adjust the seasoning if needed.
- Serve the Palauan Pork Mechado hot with steamed rice.
